Tam is the field supervisor in charge of all the people who make sure that the carrot crops are free of weeds which would compete with the carrots and choke them out and can encourage disease. Keeping the carrot crop clean is one of the most vital on the farm especially this year when the growing conditions have been just right for weeds- warm and damp!

After 22 years with the Army, Tam has a wealth of experience in dealing with people and is very enthusiastic about his team. Tam says: “from late May until the end of July, we employ 80 people to help weed the vegetables. Around 85% are employed through Concordia who stipulate that they must either speak some English or have some agricultural experience. Most are from Bulgaria but there are people from Lithuania, Latvia, Poland and Romania. Many of them are students and it is the first time they have worked abroad so it’s really important that we look after them and ensure that they enjoy their time with us as we like them to come back again! This year they have all worked really hard and been just excellent. It has been a joy to work with such enthusiastic youngsters”

A former goalie and keen football fan - supports Celtic) - Tam enjoys a game himself and is looking forward to the forthcoming match between a team from the local village and the weeding squad-with their sharp eyes and lightning reflexes honed by all the weeding it should be a close game!

Young football fans and inspiring foodies - Celtic Football Club launched a Food for Life children's menu at their Number 7 Restaurant in 2006 with help from local school children, with a view to extending the health message into the local community.
